Soak the beans overnight and cook them like any other variety of white beans—for
about 20 minutes in a pressure cooker or 1 1/2 to 2 hours on top of the stove. 1 cup of dried
yellow-eye beans makes approximately 2 1/2 cups of cooked beans.
Buying and storing tips
Look for yellow-eye beans that have a glossy sheen similar to navy beans. Store dried beans
in a sealed glass or ceramic jar.
